We made homemade peach puree mimosas! There is nothing more delicious than a sweet, bubbly beverage with alcohol in it.
After a night out, I woke up and began the 2 mile walk to my friend Krysten's house carrying a bag full of fruit. All of my peaches were going bad but I knew we could find a use for them and make breakfast smoothies in an effort to be more healthy and make up for the night before. Somehow the peaches never made it into our smoothies though and the next thing we knew we were headed to Fine Foods for mimosa materials. When we got back to Krysten's she saw them sitting on the counter and came up with the idea for fresh peach mimosas. We pulled out the juicer and juiced the life out of those peaches.
Peach puree is surprisingly thick. Like pudding thick. We had to thin it out with some water and then mixed it with orange juice and voila! We had peach mimosas. We felt very kate spade Saturday at the moment so obviously we had to document our excitement with a classy picture and fabulous arm candy.
Successful Saturday. One for the books.

- 3-4 ripe peaches
- Orange Juice
- Cut peaches into halves and remove pits. Add to juicer and collect the fresh peach juice in a bowl. Add water to peach juice if needed to thin it out.
- Mix a splash of orange juice with the peach juice - or more depending on your preference.
- Grab several champagne flutes and fill up 3/4 with champagne, then finish off with fresh pressed peach juice!
