Looking for a quick, go-to salad? Then this recipe is for you! I picked it up while working at an Scicilian resturant during my last semester in college and it quickly became a favorite. You only need four (4) ingredients!
- Roasted red peppers
- Blue cheese
- Balsamic glaze
In a bowl, add two (2) handfuls of arugala, one (1) handful of blue cheese and one (1) handful of roasted red peppers. Drizzle about two (2) tablespoons of balsamic glaze over top and toss everything together. Serve on a plate or in a bowl and enjoy! You can always add bacon bits or another type of protein to this recipe, but I prefer it without.
