Homemade Steak Tacos

I'm cooking up steak tacos for dinner tonight! I love making tacos because I'm able to make a huge batch and have leftovers for a few extra nights. You can serve these with a side of Spanish rice and beans or eat them alone! Scroll down for the full recipe.

STEAK TACO INGREDIENTS

  • 1 large beef flank steak
  • 1 package of corn tortillas
  • 1 avocado diced into small pieces
  • 1 tomato sliced 
  • 1 onion sliced
  • ½ cup crumbled feta cheese
  • 1 lime, cut into wedges

CHIMICHURRI SAUCE

  • 1 cups packed fresh parsley leaves
  • 1 cup packed fresh cilantro leaves
  • 4 medium garlic cloves, peeled and smashed
  • 1/2 cup onions, chopped
  • salt and pepper to taste
  • ¼ cup extra-virgin olive oil
  • ¼ cup lime juice
  • ¼ cup lemon juice

INSTRUCTIONS
Start by seasoning the steak with salt and pepper and let sit for about 30 minutes to an hour. In the meantime, you can start making the chimichurri sauce by placing all of the sauce ingredients into a food processor or blended and pulsing until smooth. Place the sauce in the refrigerator to chill. Next, start cooking your steaks in a skillet with the sliced onion and cook on both sides for about 5 minutes or until done. Slice the steak into think pieces an begin assembling your tacos with avocado, tomato and onion. Top with feta and lime and enjoy!
