Banana Orange Mini Loafs

I've been trying to get back into baking lately. I used to bake ALL THE TIME and would make an array of baked goods from scratch at least 4x per week. That hasn't happened much in the past 4 years though, so when Jd bought be a stand mixer last Christmas I realized how much I missed baking. The past year has been crazy, I got my first big girl job offer in Virginia, Jd graduated college, I took a job in New York and moved within 3 weeks, and now that we're finally, really settled I feel like I can start living again. It's been a whirlwind, but one of my resolutions in 2016 is to bake more, so this morning I'm sharing my Banana Orange Mini Loaf recipe! BANANA ORANGE MINI LOAFS

INGREDIENTS:
2 bananas
Zest of 1 orange
1 cup of flour
1/3 cup of sugar
1/2 teaspoon baking soda
1/2 teaspoon of baking powder
1 egg
1/3 cup of milk (you can use more if needed)
1/2 teaspoon vanilla

DIRECTIONS:
Preheat your oven to 350 degrees. Combine all of your dry ingredients, mixing thoroughly so the baking soda and baking powder have mixed evenly. Add your remaining ingredients into the bowl of your stand mixer (we use a KitchenAid mixer) or a large bowl and mix until smooth on low. Now add your dry ingredients and mix until smooth on low. You should have a nice sticky batter now. Spray your two mini loaf pans with cooking spray or grease with butter and pour the mix into each one. Bake for 10-15 minutes or until cooked all the way through. Serve with jelly or butter.
