Paleo Meatballs

It's meatball time! I don't know why, but for some reason I really LOVE meatballs. I could eat them at least once a week. Since we are eating healthier this year, I figured Paleo Meatballs would be a great meal - although I do the miss those jelly meatballs. This recipe is the EASIEST dinner recipe on this blog I believe. It only takes about 30 minutes from start to finish. Find the recipe below!

PALEO MEATBALLS

INGREDIENTS
1 pound of ground beef
1/3 cup diced yellow onion
3-4 cloves of minced garlic
1 egg
1 teaspoon pepper flakes
pinch of salt
pinch of pepper

DIRECTIONS
Pre-heat oven to 400 degrees. Combine all in ingredients in a stand mixer and mix on low (or mix by hand if you don't have stand mixer). Line a baking sheet with Reynolds Wax Paper and fill with golf ball sized meatballs. Bake in the oven for 20-25 minutes or until cooked all the way through. Serve with mustard or dipping sauce of your choice! This goes well with a small side salad as well! Enjoy!
