Bacon Wrapped Guacamole Stuffed Chicken

So remember how I mentioned that Jd and I eating healthier this year? Well we made this crazy paleo dish!!! Minus the bacon, I'd say it's a winner in the health food category. We are easing into this diet, but we did join our local YMCA over the weekend and have been diligent about our workouts so I think we deserve a few slices of crunchy bacon #amiright? Anyway, this dish contains some of our favorite foods - baked chicken, bacon and guacamole! It's super simple and only takes about an hour from start to finish. Find the recipe below!

Boneless Chicken Breast
Guacamole (you can make your own or use store bought)
Thick Bacon
Sauer's Salt and Pepper

Preheat your oven to 400 degrees. Slice each chicken breast 3/4 of the way through and spread the guacamole inside. Fold over and wrap with enough bacon slices to cover the breast entirely. Place the chicken breasts in a cast iron skillet or on a baking rack placed on a baking sheet so the chicken cooks through entirely. Cook for about 30-40 minutes, or until the chicken has reach a temperature of 165 degrees. Broil for about 5-10 minutes or until the bacon crispy. Serve with a side salad.
